- 4 eggs
- 120g sugar
- 60g flour
- 60g hazelut powder
If you want to make a natural sponge cake, use 120g flour instead of 60g flour/60g hazelnut powder.
Combine in a bowl eggs and sugar and whisk the mixture until whitens. Put the bowl over a pan of boiling water an whisk until the temperature reaches about 40°C. Remove from the water bath and continue whisking until doubles in volume preparation. Combine the flour and the hazelnut powder with a spatula.
Cook your sponge cake in a oven at 180°C for about 15 minutes. Your cake has to be brown on the top. Let cool on a baking rack.
